Cook the ground sausage on medium-high heat in a medium-sized skillet with garlic salt and fennel seed, drain if needed and return to pan.
In a large skillet, heat up 2 tbsp of olive oil on medium heat. Add in the potatoes and peppers, and let simmer for about 15 minutes, stirring and mixing throughout to evenly cook. Mix in the cooked sausage, let cook for another 5 minutes.
While this is simmering in a cleaned medium-sized skillet, spray it with nonstick spray and add enough oil to cover the bottom of the pan. Heat the oil in the pan up to medium heat.
Then, crack an egg and cook on both sides until it's slightly browned and fried. (about 2-3 minutes). Do this for all eggs.
When the potatoes and sausage crumble are cooked through, add a portion to each plate, then top with a slice of cheese and egg.
Notes
Additional add-ins like sweet onions are great with this recipe. Serve it with hot sauce to make it spicy.
