Yukon Gold Potatoes (unpeeled, washed and cut)

Kosher Coarse Salt

Butter, Softened

Heavy Cream
1/2
Cup
Sour Cream
Salt and Pepper to Taste

Green Onions
Instructions
Wash and cut the potatoes if needed.
Add potatoes to a large saucepan, cover with water and 1 Tbsp salt.
Boil the potatoes until fork-tender on medium-high heat about 15-20 minutes.
Drain water and then place the potatoes in a large mixing bowl.
Mash them until you reached your desired consistency.
Add butter, heavy cream, and sour cream. Fold into mashed potatoes.
Add salt and pepper to taste.
Transfer potatoes to a cast iron skillet and spread evenly.
Preheat the pellet grill to 225*F.
Smoked for 30-45 minutes, increase the temperature to 350*F, and smoke for an additional 20-30 minutes or until bubbly and browned.
Serve warm.
Notes
If you need to hold the potatoes at temperature until the rest of your food is done, turn the temp down to 225*F and cover tightly with foil.
