Preheat the smoker to 300*F. Use either a blend of pellets or hickory pellets.
Coat the smoker rack with grapeseed oil spray.
Lay the slices of bacon directly onto the smoker rack and top with black pepper and brown sugar, or you can leave the bacon plain too.
Cook for 15-20 minutes for thinly sliced bacon and up to 35 minutes for thick bacon. Be sure to monitor the smoker for hot spots where the bacon may cook faster. This is very common for most smokers to heat unevenly.
Serve hot off the smoker.
Notes
Brown sugared bacon does cook faster than plain bacon or simply peppered bacon.
