Unpack the chicken drumsticks and pat them dry with a paper towel, placing them on a tray.
Coat each of them with olive oil using a brush, you can also use olive oil spray.
In a small bowl, mix together the spices.
Evenly sprinkle the spices over the chicken drumsticks.
Place the tray back into the fridge.
Get the grill ready for the indirect cooking. You can use any pellets for your smoker or pellet grill, but cherry, apple, or pecan work very well and provide a great flavor.
Heat the smoker to 250*F.
Place the chicken drumsticks on the smoker or grill.
Close and cook.
Continue cooking until the internal temperature reaches 175*F (done at 165*F, we prefer them at 175*F). This took about 2 hours. Time will vary though depending on your grill and the size of the drumsticks, it's best to use a probe or meat thermometer throughout the cooking time.
Once the chicken is fully cooked, take it off the smoker and let it rest for about 4 minutes.
Coat with barbecue sauce and serve.

Seasoning can be changed to use your favorite dry rub or seasoning instead of the listed seasoning.
