In a medium sized saucepan, bring the chocolate chips, cream, and vanilla to a boil on low to medium heat, stir frequently until the chocolate chips are fully melted.
Carefully pour into a lined baking dish.
Let harden in the fridge for 2-3 hours.
Break pieces apart and roll into a ball in your hand.
Roll into the toppings, pressing them in to fit.
Let the truffles harden in the fridge until ready to serve.
