Crispy Potato Rounds

Colby Shredded Cheese

Milk

Pepper
Instructions
Preheat the oven to 400*.
In a medium-sized skillet, sear the sausage on both sides until nearly done, then place on a paper towel lined plate to let grease drain off.
Spray a 9x13 baking dish with non-stick baking spray.
Place the sausage evenly on the bottom.
Top evenly with pepper and onion.
Evenly place the crispy potato rounds on top of the entire casserole.
Top with shredded cheese.
In a small mixing bowl, beat together the eggs, milk, salt, and pepper.
Evenly pour over the entire dish.
Bake for 1 hour or until well done.
