This weather though has certainly made me want lots of comfort meals, which I’m trying to keep them as low calorie as possible too.
Are you working on diet goals this year? I’m sure most of us probably are. I am just trying to really get reset and back on track. I was doing so well a few years ago with losing weight and eating right and somehow I got off track last year and it’s been quite a journey trying to get back on track again.
I got too obsessed with counting calories and felt like it was controlling me. Did anyone deal with that? I think counting them is a good thing but it started to really stress me out on a daily basis and become just as unhealthy as eating badly.
Now, I’m trying to find balance and simply eat better meals overall, making better choices without all the counting.

As we plan out this week and head into this next year, I’m really working to utilize leftovers. Do you do that?
Since I cook a lot, we have a TON of leftovers. It completely pains me to throw away food, when I know so many would love to have that food. This year, I’m really going to make attempts to cut back on our leftovers and reuse them for other meals.
I’m striving to cut back on food waste in general. Do you all have any tips? I’d love to hear them.
