We are just DAYS away from May! How did this happen? My kids are out of school in just a few weeks for the summer. I can’t even wrap my mind around it.
I’m also feeling rather unprepared for summer too. I have no plans, no idea what we are going to do or better yet what my kids will be doing while I work.
I have nothing…and everything all at the same time.
Why do I say this? Because the thought of NO PLANS actually sounds like the perfect plan. Doesn’t it?

I may be changing my tune after a few days of “I’m bored”…but I’m looking forward to a fun-filled, relaxing summer. I do have plans to spend most of it at the pool, hopefully, my kids make some friends they can play with and we end up having a great time there this summer.
What else am I looking forward to this summer?
Fresh produce and cooking out! That may actually be one of my all-time favorite things about summer, all the fresh produce. So far, I think we are going to just stock up at the farmer’s market this year. Our garden has been a downer the past few years now, something about those bugs in our backyard…they always beat us to the produce.
So I think the farmer’s market may be the next best option!
I used to dread summer because it’s just so crazy hot here in Oklahoma but now I actually LOVE it. Of course, unless we are around water during the day, we don’t go outside until the evenings…but I’ve grown to really the warm evenings. I could do without the mosquitos but I guess that’s what we have to deal with, and I’m okay with that.
Now that I’m fully hungry, let’s get to this menu.
