Fill up those Easter baskets with delicious Toasted Coconut Peanut Butter Brownies, plus all your Hershey’s favorites! 
Easter is just around the corner, are you ready yet? This year it seems to be sneaking up on me, but I’m getting myself into gear because we host a huge Easter Egg Hunt and family dinner on Easter!
That means I have to start filling up eggs and cooking up delicious foods for the big day. Thankfully, Hershey’s has come to my rescue from all things candy from Hershey’s Kisses chocolates to Cadbury Crème Eggs Candy, they have me covered!
As my kids get older, it seems to make the holidays more fun, especially Easter. I love that Easter isn’t nearly as stressful to me as Christmas and considering I’m really only treating my kids it frees up more of my time and of course money to do a little more around Easter time.
One thing that I LOVE to do is add a little homemade treat to their basket using some of the candy. I think it’s so fun to package a treat with ribbons and bows and add it to their basket. It allows me to share some of my love of cooking with them, plus add a personal touch.
This year, I decided to make these Toasted Coconut Peanut Butter Brownies. These mix a bit of homemade with store bought too. I decided to use Reese’s Peanut Butter Eggs and the Hershey’s Solid Milk Chocolate Eggs to make these brownies.
Then, once the brownies were just about done I added shredded coconut to the top to get it nice and toasted. The coconut gave it a nice Easter touch and all the colors in the brownies were very fun and festive too.
These didn’t last long around our home, they were loved by all! Then, my son just had to try a Cadbury Crème Egg Candy too, this was his first time trying one actually.
I’m not entirely sure why but for some reason he hadn’t had one before…he was begging for another one after that! I’ll be adding those to a recipe soon too, not to mention I’m pretty sure the Easter Bunny will add a few of those to the baskets this year too.
We love to go beyond the Easter basket this time of year and do a huge egg hunt with lots of fun candies from Hershey plus treat our family to a big dinner. Then, of course, I like to add a little bit of my own homemade foods with the kids’ candies in their basket.

Toasted Coconut Peanut Butter Brownies
Ingredients
- 1 Package of Brownie Mix Plus ingredients to make it, eggs, oil, and water
- 1 1/2 Cups Reese's Peanut Butter Eggs
- 1 1/2 Cups Hershey's Solid Milk Chocolate Eggs
- 1 Cup Shredded/Shaved Coconut
Instructions
- Preheat the oven to 350*.
- Prepare the brownie batter as instructed.
- Fold in the candy into the batter.
- Place a sheet of foil or parchment paper into a 9x13 baking dish, spray with non-stick cooking spray, then evenly spread the batter in the pan.
- Bake per the box instructions, within the last 5 minutes carefully add the coconut to the top of the brownies, then continue baking.
- Let them cool for 1 hour, then slice and serve.
