I’ve mentioned that I’ve been really watching my diet, right? Well, one way that I’ve stayed on track but I’ve also have enjoyed some carbs is with these Minute Ready to Serve Organics rice varieties. They provide a wholesome rice option, but also just the right portion too! I’ve been using these as sides to meals and additions to meals for months now, but recently made a delicious Taco Rice Bowl.
I really love that these are great for lunchtime. I typically will prep taco meat earlier in the week, then I can heat up a rice cup in the microwave for 1 minute and it’s ready! I simply mix-in my toppings like taco meat, tomatoes, black beans, cheese, and then top it with a little Light Catalina Dressing. This is a go-to for me for lunchtime. It’s also so simple that I can make it while getting the kids’ lunch ready too. This product is a pantry staple in our house and comes in a few different varieties too such as, Minute Ready to Serve Organic White Rice, Minute Ready to Serve Organic Brown Rice, and Minute Ready to Serve Organic Red Quinoa and Brown Rice with Garlic.
I decided to use the variety with Quinoa for these Taco Rice Bowls and it was such a great addition and a better-for-you option too. Of course, the best part is it’s so portable. I’ve found these to be perfect regardless of what your lunchtime may look like. Maybe you are at work or at home? Maybe even on the go? They can easily go with you!
Lunchtime always seems to be a hard time of day for me to eat well, is it for you? I’m typically either trying to rush around with the kids in between activities over the summer months or if it’s during the school year, I’m working. I’ve discovered that when I get in work mode, I can’t take a break! I guess that could be a good or bad problem to have? I get in the groove and don’t want to stop, so sometimes I am rushing to get lunch made so I can get back to work. Thankfully, these only take a few minutes and then I’m ready to eat and get fueled to push through the rest of the day.

Taco Rice Bowls
- 1 Pound Ground Beef
- 1 Package Taco Seasoning
- 4 Minute Ready to Serve Organic Red Quinoa and Brown Rice with Garlic
- 1 Cup Black Beans
- Sliced Tomato
- Shredded Mexican Style Cheese
- Light Catalina Dressing
- Brown the ground beef in a medium sized skillet on medium-high heat.
- Drain and put back in the skillet, add the seasoning as instructed on the package.
- Warm up the rice as instructed.
- Place the rice in a bowl, then top with the ground beef, beans, tomato, cheese, and a drizzle with dressing.
