Southwestern Stuffed Potatoes bring a baked potato to a new level of delicious!
I am becoming quite the baked potato server and eater lately! Baked Potatoes are one of the foods that I don’t have to argue with my picky eater over or walk him through eating each bite, he loves them. That’s probably why I am growing so fond of them lately. It makes my life easier and less stress!
They take just a few minutes to put together too, making dinner time a breeze. This is usually a dinner we have on a night before I need to go to the grocery store, then we use what we have on hand to stuff them full of delicious goodness.
This particular time I decided on this sort of Southwestern Style Baked Potato. We topped them with corn, black beans, chili cheese Fritos, avocado, tomato, cheese, and drizzled Catalina dressing. I think these would be great with a lime dressing too. They can also be made with a corn salsa that is topped with cilantro. We decided to keep ours as a meatless meal, but you could always add chicken or beef to it too.
I typically will setup a baked potato bar on our baked potato nights, I set out all the toppings then each family member can pick and choose what they want on their potato. Simple and easy!

Southwestern Stuffed Baked Potato
Ingredients
- Baked Potatoes
- Butter
- Corn
- Black Beans
- Sliced Avocado
- Sliced Tomato
- Chili Cheese Fritos
- Shredded Cheddar Cheese
- Catalina Dressing
Instructions
- Slice the potato open, then top with your toppings of choice and serve.
