Get ready to make a delicious dinner with this Slow Cooker Taco Soup!
It’s September! What does that mean? Fall is coming! It’s coming, friends. My favorite season! I can already smell the soups, chilies, stews simmering in the slow cookers and what else? PUMPKIN! My favorite. You have been warned!
Before we get to all that pumpkin, I wanted to share one of my favorite soups that we make frequently during the fall and winter months, Slow Cooker Taco Soup.
This soup is so simple using several canned ingredients, which makes it very frugal too! I also like to precook my ground beef and have it seasoned and ready to go in the freezer.
This way I can just toss the cooked meat in with the canned goods and let the slow cooker do all the work!
How to Make Slow Cooker Taco Soup
This time I decided to try Canned Corn instead of my typically frozen corn. I love that they have a no salt added so that I’m truly getting just the veggies and no extra stuff!
I noticed that many of their products are no salt added too. I have been buying several for my daughter as ‘finger foods’.
We like to serve ours with corn chips; however, my friend mentioned how good Doritos are with this. Then, I had that mouth watering urge to try Doritos with it.
I’ll be doing that next time I make these, can you imagine that cheesy goodness with taco soup? Yum!
Typically when I make this there should be enough for leftovers between my husband and I, but we are lucky to have leftovers! We both go through it so quickly that it’s rare to have leftovers.
The times that we do though I just put the soup in freezer safe storage and freeze the leftovers.
Then, when we get in a soup mood again, I can put that block of soup in the slow cooker and let it warm up and have soup all over again! Fabulous!

Slow Cooker Taco Soup
- 1 lb Ground Beef
- 1 Taco Seasoning Packet or Gluten Free Taco Seasoning Packet
- 1 15 oz Can of Black Beans
- 1 14.5 oz Can of Diced Tomatoes
- 1 14.5 oz Can of Beef Broth
- 1 15.25 oz Can of No Salt Added Del Monte Canned Corn
- 1 Cup of Water
- Dash of Cayenne Pepper
- Shredded Mexican Style Cheese
- In a skillet brown the meat and add in the taco seasoning as instructed on the package.
- Once the meat is browned, add the meat and all ingredients to the slow cooker.
- This will cook on low for 6 hours.
- Serve topped with chips and cheese.
