Our very favorite pot roast to make is this Slow Cooker Mississippi Pot Roast. I’ve shared this recipe before showcasing it as Ninja Foodi Mississippi Pot Roast.
The option I previously shared using the Ninja Foodi is pressure cooking the roast within an hour. If you are like me and sometimes you just need to come home and already have dinner done, this slow cooker option will work perfectly.
This is exactly the same recipe; however, instead of pressure cooking, we will be slow cooking!
This Mississippi Pot Roast is perfectly served with Ninja Foodi Mashed Potatoes too!
How do you make Mississippi Pot Roast into Gluten-Free Mississippi Pot Roast?
This recipe was easy to make gluten-free with a swap of gravy, we decided to use Gluten-Free Gravy Packets instead of the “Au Jus” that is in many Mississippi Pot Roast recipes.
It worked out wonderfully and we were all able to enjoy it.
Tips for Making Slow Cooker Mississippi Pot Roast:
If you prefer, you can brown the roast before slow cooking; however, I’ve never actually found that to be necessary.
The roast will then be covered with the remaining ingredients. Be sure to use the Pepperoncini Peppers, these are what will really give it that zesty flavor.
These peppers are not spicy, they have a similar heat as bell pepper. It’s basically a very mild chili pepper. I will typically use 3-5 of these; however, as you can tell in the picture, sometimes I use more than that.
I happened to only have a few left, so I went ahead and used the remaining that I had to finish out this dish.
This meal is a set it and forget it, being cooked for 8 hours on low, then just serve it as is or with your favorite side dish. We always serve this with mashed potatoes.

Slow Cooker Mississippi Pot Roast
Ingredients
- 3 lb Beef Chuck Roast
- 1/2 Cup Water
- 1/2 Cup Pepperoncini Juice
- 4-5 Pepperoncini Peppers
- 1 Ranch Packet Seasoning
- 1 Brown Gravy Packet or Gluten-Free Brown Gravy
- 1/4 Cup Unsalted Butter
- 1/2 Tbsp Cornstarch Optional
Instructions
- Place the roast in the slow cooker, add the water and juice to the pot.
- Top with the peppers, seasoning packet, and gravy packet.
- Place the butter right on top of the roast.
- Cover and cook on low for 8 hours.
- Remove the lid and shred the roast.
- If preferred add in about a 1/2 Tbsp of cornstarch if needed to the liquid in the pot and thicken it up to make a gravy.
