If you are like me then you tend to take a break from the oven during the summer months. I actually have a hard time just getting into the kitchen during the summer months. I am usually going nonstop with my kids all day long, and I love doing that, so I want to soak up every single moment I can with them. That means I really lean on summer recipes during these months that utilize the slow cooker or grilling outdoors.
This past week, I tried a new twist on roast with this Slow Cooker Italian Roast. I’ll admit as soon as I took a bite, I was in roast heaven. The burst of flavors from Hunt’s Roasted Garlic Diced Tomatoes is absolutely incredible.
I may be late to the game, but I actually did not realize how many varieties of canned tomato flavors are available. I simply added a few cans of these tomatoes and it took this roast to an entirely new level, plus it was a breath of fresh air for the summer.
I just love the feeling of prepping dinner the night before for the slow cooker, then in the morning before we head out for the day, dinner is on. When we came home that afternoon my son even ask what that amazing smell was. Your home will smell divine, plus you’ll be ready to eat it by dinner time!
I found this to be perfectly juicy and tender. We shared some with my parents and they were both debating who would get the last bite.
Now, it’s time for dinner!
These tomatoes are always available at Walmart, which is where I found a wide variety to choose from.

Slow Cooker Italian Roast
- 3 Lb Beef Roast
- 2 14.5 Oz Cans of Hunt's Roasted Garlic Diced Tomatoes
- 1 14.5 Oz Can of Beef Broth
- 1/2 Cup White Cooking Wine
- 1/4 Cup White Onion Chopped
- 1 Tbsp Dried Rosemary
- In a 5 quart slow cooker, place the roast on the bottom.
- Pour all ingredients over the roast.
- Cover and cook on low for 6-8 hours.
