This time of year calls for a lot of use of the slow cooker, plus comfort food to keep us warm and toasty, right? Using just a few simple ingredients, you will soon have just the meal you were looking for with these French Dip Sandwiches.
Slow Cooker French Dip Sandwiches will cook low and slow for 6-8 hours, once the meat is ready to serve it will then be added to a toasted hoagie or crusty baguette and served by dipping it in the warm au jus sauce.
What is a French Dip Sandwich?
A French Dip Sandwich is a hot sandwich that traditionally had thin slices of beef.
It is typically served on top of a hoagie roll and then the pan of meat drippings is used to create the au jus dipping sauce.
Here in the United States, it’s also served with melted provolone cheese on top along with caramelized onions.
This version will be a little bit different as I’ve adapted it for the slow cooker. Nevertheless, it’s still a wonderful hearty meal and a great beef sandwich.
What type of cheese should you use for Slow Cooker French Dip Sandwiches?
Provolone Cheese will most often be topped over a French dip sandwich.
Provolone Cheese is an Italian Cheese that is aged for a few months before serving. It has a nice, sweet taste that compliments the flavors of the beef chuck roast. It is also a nice, melty cheese too!
If you are unable to locate Provolone Cheese, swiss cheese can also be used.
What type of meat should you use for Slow Cooker French Dip Sandwiches?
French Dip Sandwiches are made with a boneless roast, we prefer to use a beef chuck roast. It’s ideal to use a very tender roast, that is the taste you are going for. The roast will simply fall apart, which is exactly what you want.
The juicy beef is going to make the sandwich nice and flavorful.
Tips for Making the Best Juicy Slow Cooker French Dip
If you prefer, you can easily brown the roast on all sides before adding it to the slow cooker; however, this is merely a preference. I typically do not do this step, but again it is up to you.
If you choose to do this step, add a little bit of olive oil to a large skillet on medium-high heat and lightly sear the roast on all sides before removing and adding to the slow cooker.

We like to use one long French Baguette and cut it down into smaller portions; however, you can also use individual-sized French Baguettes too. Again it’s up to you!
Reserve the sauce on the bottom of the pan in your slow cooker, this will be used for dipping the sandwich into, it makes a delicious au jus.
Once you are done layering your baguette, we like to add a little bit of garlic butter to the top before baking it in the oven. As it bakes the baguette will get nice and toasty and then the cheese will melt. This is also optional based on your preference, but we feel like it makes the sandwich even better.
Can you make this French Dip in the Ninja Foodi?
If you have a Ninja Foodi Multi-Cooker, this recipe can be made in the Ninja Foodi using the Slow Cooker Function.
This means you would leave the nozzle on VENT and then proceed with the slow cooker function.

How do you store leftover beef roast?
The leftover shredded beef can be stored in an airtight container for up to 4 days in the refrigerator.
When ready to reheat, use a microwave-safe dish and reheat for 1-2 minutes before adding to any leftover hoagie rolls and topping with cheese.

Slow Cooker French Dip Sandwiches
Ingredients
Roast
- 2 Pounds Boneless Beef Roast
- 2 Cups Beef Broth
- 1/2 Cup Sweet Onion Sliced
- 1 Tsp Onion Powder
- 1/2 Tsp Celery Salt
- 1/2 Tsp Garlic Powder
- 1 Tsp Dried Parsley
- Salt & Pepper to Taste
Sandwich
- French Baguette or Gluten-Free Baguette
- Provolone Cheese
- Melted Butter with Garlic & Parsley
Instructions
- Add all roast ingredients into the crockpot or slow cooker.
- Cover and cook on low for 8 hours.
- Once done, shred the meat, then top the sliced baguette with roast and cheese.
- Coat the top of the baguette with a light glaze of garlic butter. This is simply melted butter, garlic powder, and parsley.
- Be sure to reserve the sauce for the au jus for dipping.
- Bake the baguette if preferred in the oven at 350°F for 5-10 minutes until the cheese melts, this will toast the baguette and melt the cheese. (Optional)
- Serve with the au jus sauce.

I use the slow cooker function to make this in the Ninja Foodi, it would be done exactly as written but with the slow cooker lid and function or the pressure cooker lid with the nozzle set to ‘vent’.
