On top of being ready for fall, I am also getting into the swing of school starting back up. We had a lot of excitement as my son entered Kindergarten, now we are finally getting a routine down.
That means in the midst of this, I need quick and easy meals to the rescue. I decided to pull together this tasty, Slow Cooker Fiesta Roast, using Canned Goods in my pantry, paired with my trusty Slow Cooker to make a very easy dinner.
The result?
The roast is juicy, tender, and bursting with flavor. This dish is actually perfect paired with a side of rice or even a little chips and queso too.

Slow Cooker Fiesta Roast
Ingredients
- 3 Lb Beef Roast
- 2 14.5 Oz Cans of Hunt's Fire Roasted Diced Tomatoes
- 1 14.5 Oz Can of Beef Broth
- 1 15.25 Oz Can of Sweet Corn
- 1 4 oz Can of Green Chilies
Instructions
- In a 5 quart slow cooker, spray it with non-stick cooking spray and place the roast on the bottom.
- Pour all ingredients over the roast.
- Cover and cook on low for 6-8 hours.
