I’ve mentioned it a few times now but my husband and I have really been watching our diet and what we eat in general. I quickly noticed a few things, one of which was how many times during the day I walk to the fridge and grab a bite of something. Those somethings add up quite quickly in calories that I had not even been paying attention to in the past. That has actually been a huge part of my weight gain over the past few years, I’ve had more opportunity to go to the fridge and grab a snack. When I worked outside the home, I would have been getting up so many times to go the break room, that’s what stopped me from snacking at work. It’s different when you work from home, plus at least a good 50-60% of your time is also spent in the kitchen. Now, I resist!
That means I don’t take little bites or lick the bowl of anything. I don’t eat the leftovers from my kids snacks, I eat my own healthy snacks and stick to the right portion size. It’s been quite life altering this past month. I feel better than I have in years with the combination of both eating healthy and working out regularly too. It’s amazing how much that can change your overall health.
In the midst of that, I’ve learned food prep is very important and so is really planning out your meals. These Slow Cooker Chicken Fajitas ended up being one of the first things I made on our new way of eating journey. The great thing is all you need is a fajita seasoning packet, chicken, peppers, and onions and you can make enough chicken to last your throughout the week too. I decided to eat these with bean chips that I found at our local health food store. They are similar to tortilla chips but they are made from beans making them a much better alternative.

- 2 Lbs Boneless, Skinless Chicken Breast
- 3 Bell Peppers, Sliced
- 1/4 Cup White Onion, Diced
- 1 Fajitas Seasoning Packet
- Tortilla Chips, Tortillas, or Lettuce for Salad
- Spray or line a 6 quart slow cooker with non-stick spray or lining.
- Place the chicken on the bottom, then add in the pepper and onion.
- Sprinkle the seasoning over the top evenly and cover.
- Cook on low for 6-8 hours.
- Shred the chicken with a fork before serving.
