I am a believer in utilizing leftovers as well as freezer or batch cooking. One of the meals that I enjoy cooking due to the amount of leftovers is Slow Cooker Pulled Pork. I typically put the leftovers in freezer safe containers and store. I pull these out on busy nights when I do not have the time to cook, surprise?! I don’t cook every night! I am sure it’s the same in your household as well.
When we have nights where we utlize our freezer meals or leftovers, I like to mix up the dish or create a different version using the meat.
One of my favorite ways to eat pulled pork that we have either froze or have leftovers of is on a hoagie roll. An added bonus is when I make a large batch of homemade coleslaw. I use 1 cup of pulled pork and slather my sub, then I top it with a big spoonful of homemade coleslaw.
Crunchy.
Meaty.
BBQ.
Deliciousness!
