A great way to get into the season of Back to School is of course with after school snacks like this Simple Guacamole Recipe with El Monterey Taquitos! This post is written on behalf of El Monterey, all thoughts and opinions are my own.
I’m not sure about you, but when we are back to school the afternoons just get very hectic. The minute that we walk in the door, my kids are already asking for snacks and dinner. Many times I don’t even have a chance to set my purse down without them raiding the pantry. The best thing I’ve found to do is have something already prepared and easily accessible to let them snack on before dinner time.
It just makes the afternoons much less chaotic and gives them a little snack during homework or rest time too. I prefer to mix a little fresh with frozen. In this case I decided to whip up a batch of guacamole earlier in the week, that way all I had to do was warm up El Monterey Taquitos and they were ready for dipping! My husband is just as bad as my kids too, so this works out well for him too. He comes in just after we get home and normally I’m right in between trying to transition from helping the kids with homework and getting dinner on the table.
I guess we could call this a little appetizer for him and an after school snack for my kids. Simple Guacamole
Ingredients
- 4 Avocados
- 2 Roma Tomatoes Sliced
- 1 Lime
- 1/2 Cup White Onion Diced
- 1/2 Cup Cilantro Diced
- 1 Tsp Salt
- 1 Clove Garlic Crushed
Instructions
- Peel and pit the avocados, placing the avocado in a medium sized mixing bowl.
- Use a fork to mash it up a bit, then add in the tomatoes, juice of 1/2 a lime, white onion, and cilantro.
- Mix in the salt and garlic.
- Stir well until combined, chill, and serve.

We are avid guacamole lovers in my home. As much as we love it I’ve never tried to make it myself. Maybe I will give it a go and see how it turns out.

Your guacamole looks a lot like mine…I prefer it chunky as opposed to super smooth. I usually just serve mine with raw veggies or nachos but I think I’ll try making taquitos next time!
