Make this Simple Chicken Salad as the perfect way to do lunch!
As summer is now in full swing and it’s just plain hot here in Oklahoma that means it’s effortless meals to the rescue in our household! One thing I almost always pick up while grocery shopping is a rotisserie chicken.
There are just so many meals that can be made with a rotisserie chicken, I just can’t resist! I always know that when I go to the grocery store for the week, I’ll be making something that night with the chicken from the store.
As the kids were out playing, I decided this chicken salad would make for a great, light dinner for my family. Of course, on top of that, we were able to sit outside at the picnic table and eat up while the kids played.
I absolutely love spending time outside and here in Oklahoma during the summer that usually means after dinner time, when it’s actually cool enough to go outside.
This chicken salad can easily be made with the rotisserie chicken, simply shredding it up and mixing it with a few additional ingredients.
I decided to add Greek yogurt, mayo, grapes, green onions, seasoned salt, rosemary, and dill weed to our chicken salad.
Then, I topped it on a slice of toasted gluten-free bread with garden fresh lettuce to make this tasty dinner. If you have a few fresh strawberries nearby, they pair well with it making it both light and fresh.

Simple Chicken Salad
Ingredients
- 3 Cups Shredded Rotisserie Chicken
- 1/3 Cup Green Onions Chopped
- 1 Cup Red Grapes Halved
- 1 Cup Plain Fat Free Greek Yogurt
- 1/4 Cup Light Mayo
- 1 Tsp Chopped Fresh Rosemary
- 1/4 Tsp Dill Weed
- 1/8 Tsp Seasoned Salt or to taste
Instructions
- In a large bowl combine all ingredients until well coated, serve on top of bread or croissant of choice.
