Most nights, we always have leftovers, it’s just how it is when you have 2 adults and 2 kids. The kids never eat all that much and that leaves us some leftovers. That’s totally fine too and how I prefer it…except when we make Ninja Foodi Cheesy Broccoli Chicken and Rice Bake.

Cheesy Broccoli Chicken and Rice was my favorite meal growing up, I used to love that creamy rice that went with. My mom made it a bit differently than I do now, but it was just as good.
Now, I’m able to make it in the Ninja Foodi, this recipe is a great addition to my list of Ninja Foodi Recipes.
How do you make Ninja Foodi Cheesy Broccoli Chicken and Rice Bake?
To make this dish, I used the multi-purpose pan that I ordered on Amazon. It’s made by Ninja and works perfectly for a variety of meals in the Ninja Foodi.
It also fits both the 6.5 quart and 8 quart Ninja Foodi. If you do not have this pan, you can make this in the pot of the Ninja Foodi. It’s just easier to serve using this particular pan as opposed to the larger pot.
One quick tip when making this is to add the cheese in the final 10 minutes, after 10 minutes of cooking, it’s the best to open the lid and mix up the casserole this way you can make sure the rice is fully cooked.
At that point, you will add the cheese and then cook for an additional 10 minutes.
How do you cook the chicken in the Ninja Foodi for Ninja Foodi Cheesy Broccoli Chicken and Rice Bake?
For this recipe, the chicken will be cooked along with some onion prior to baking it. That means you will saute it in the pot of the Ninja Foodi first, then you will add the cooked chicken to the multi-purpose pan.
I suggest using chicken thighs, they tend to cook the best and do not dry out during the baking process.
The pan will sit right on the wire rack that comes with the Ninja Foodi with the handles up so that you can easily remove it.
Be sure to use your mitts because it will be hot when it completes cooking.
How do you make Ninja Foodi Cheesy Broccoli Chicken and Rice Bake gluten-free?
The only change you need to make to make this gluten-free is to use Gluten-Free Cream of Chicken Soup. I have been able to find this at my local Walmart with the Great Value brand.

Ninja Foodi Cheesy Broccoli Chicken and Rice Bake
Ninja Foodi Cheesy Broccoli and Rice Bake is ready in just a few short minutes, plus easy to make gluten-free. It's a great comfort meal for the Ninja Foodi!
Ingredients
- 4 Boneless Skinless Chicken Thighs (Cut into chunks)
- 1/4 Cup White Onion Diced
- 1/2 Tsp Garlic Salt
- 2 Cups Broccoli Florets
- 1 1/2 Cups Quick Cooking Uncooked White Rice Minute Rice
- 1 1/2 Cups Water
- 1 10 oz Can Cream of Chicken Soup or Gluten-Free Cream of Chicken Soup
- 1 Tbsp Sour Cream
- 1 Cup Shredded Sharp Cheddar Cheese
- Olive Oil Cooking Spray
Instructions
- Spray the pot of the Ninja Foodi with the olive oil cooking spray.
- Turn saute function to high.
- Add the cut chicken and onion, plus garlic salt.
- Cook the chicken until well done, at least 165 degrees internal temperature. This takes about 10 minutes.
- Once the chicken is cooked, spray the multi-purpose pan with olive oil spray.
- Place the chicken on the bottom of the pan.
- Top with the broccoli florets.
- Evenly top with the rice.
- Pour the water over the rice.
- Combine the cream of chicken and sour cream, pour it evenly over the rice.
- Place the pan on top of the wire rack that comes with the Foodi in the low position, so it sits low in the pot. The handles should be up on the side to make it easy for you to pull it out of the Foodi.
- Using the lid that is attached to the Foodi, shut the lid and cook on the bake/roast function for 10 minutes at 350 degrees.
- Carefully open the lid.
- Carefully stir up the ingredients to be sure the rice is fully submerged under the water and soup. Just a light stirring of the ingredients will do.
- Shut the lid and cook on the bake/roast function for an additional 5 minutes at 350 degrees.
- Top with cheese.
- Cook for 5 minutes at 350*F.
- Open the lid, use the mitts to remove the dish from the Foodi.
- Let cool for 5 minutes and serve.

Hi Kristy I am wanting to try your recipe for chicken, broccoli and rice but only have chicken breast. Can I use chicken breast instead of thighs and if so should I make any adjustments? Also I only have the big pot and crisper basket that came with my ninja foodi can I just use the big pot? Can’t wait to try!

Hi Robin, you can use those I would cook it the same way with the chicken breast as with the chicken thighs. Yes, just make it in the big pot. We have done it both ways. The biggest difference with the chicken breast versus thighs is the chicken breast sometimes tends to dry out a bit more so they may not be quite as juicy as the chicken thighs. I tested this one both ways though and it does work.
What adjustment should be made using regular brown rice instead of minute rice?
I’ve only done this recipe with minute rice, with regular rice the main difference is that it will normally need more liquid and longer cook time. I would typically just check on it after 10 minutes and add more water at that point if you see that the rice is dry.

Question will canned broccoli and cheddar soup work vs cream of chicken? Just curious why one over the other?
That may be too watery, the cream of chicken is adding a creamy flavor and consistency to it, it has a similar consistency of sour cream. That said, I’ve never tried it with a canned broccoli and cheddar soup so I can’t guarantee how it would turn out, but I’d imagine it would have too much water in it. Hello! Do I have to use minute rice or will regular basmati white grain rice work?
Hey there, I’ve always used quick rice for this, so it may work with an extra few minutes but I can’t be totally sure.
Which lid did you use for this?
The air crisp lid that’s attached to the Foodi.
I’ve made this a few times and the rice was always still crunchy. Followed the directions. Last time I added a little more water and it was just watered down crunchy rice.
Curious are you using Minute Rice or Quick Cooking Rice? It shouldn’t be that way with that type of rice because it only takes about 2 minutes to cook the rice. The other varieties of rice are going to take longer.
Can this recipe be made in the Ninja Foodi Grill? I got a solid pan like the one you pictured just square.
Yes you can do it in the grill as well using the same functions.

Yes it should work fine and the same time.
I didn’t have the multipurpose pan when I made this so made it in the pot used chicken breasts. Everything turned out fine. The multipurpose pan would help keep it more compact. I use to use a stovetop 40+year old pressure cooker to do the chicken. Then get Green Giant’s frozen cheesy broccoli and rice to mix with the chicken. This is so much better. I also put this on a baked potato!!

I like to marinate the chicken in Italian dressing adds good flavor. I also use chicken stock instead of water. And add more cheese mixed in, (I like it cheesey)
I have not made this recipe, but it seems very similar to one that I am searching for. I made a ground beef/rice dish for my family once and it was a hit!!! Only thing is that I forgot to save the recipe!! I’m almost sure that it came from your site, but I’m not finding it back??? Do you have a similar dish to this that uses ground beef instead of chicken?
I used my Ninja Foodi, sautéed the beef and recall adding rice, cheese, and carrots, maybe also cream of mushroom soup… very similar ingredients to this recipe? It was SO good! Do you have a recipe like this and I’m just missing it?

I made this tonight with frozen peas, cause I didn’t have broccoli. It was very watery, but I just added some Potato Buds to help thicken it up. It was delicious, but I will use less water next time. Thanks for the recipe!

I added a little more chicken broth after mixing.. Rice was still a little crunchy. Seemed to help 🙂 and I DID use minute rice.
This was an amazing recipe. Exactly what I wanted. I substituted a box of Uncle Ben’s fast cook rice for the instant rice because that’s what I had on hand. I included the seasoning packet. It was delicious! I did add to the cooking time because I added the package amt of water, not the recipe. It didn’t hurt but that extra 1/4 cup needed more time to absorb.
