As we settle into a summer routine, it’s always a nice treat to start your day with Iced Coffee from International Delight and these Mocha Cake Donuts. I’m sharing this recipe in partnership with International Delight; however, all thoughts and opinions are my own.
During the summer months that’s typically when we should be slowing down from the school year, right? This summer though I feel like I’m even MORE busy than I was during the school year. I have my kids going in different directions and we have different activities planned almost every single day. I have plenty of things to keep them from saying ‘I’m bored’, and yet I’ve still heard that phrase already this summer.
It happens I guess, but that’s okay, they can say that while I enjoy one of these Mocha Cake Donuts, then surely I’ll be ready to go again and beat that summer boredom.
My family knows that mom has to have her coffee in the morning and in these warm summer months, I love my International Delight Iced Coffee. I love to enjoy a glass of the lighter mocha version. My husband starts every single day with a glass. That’s how he gets going in the morning and he is strictly an iced coffee drinker.
He mentioned that I should use the Iced Coffee in my Mocha Cupcakes, but I thought this time I’d whip up at batch of Mocha Cake Donuts. This is a simple recipe using a boxed cake mix but instead of using water in the mix, I replaced it with the International Delight Iced Coffee in the mocha flavor.
One of these donuts will not be enough…you’ll be coming back for another. I enjoyed mine with a glass of Iced Coffee too on the back porch.
Once I had my coffee and donut, I was recharged and ready for round two of summer fun with the kids because let’s face it when your kids wake up at 6am, 9am feels like you’ve already been going for half the day.

- 1 Box of Chocolate Cake Mix or Gluten Free Chocolate Cake Mix
- International Delight Iced Coffee - Mocha Flavor
- 1 Cup Powdered Sugar
- 1/2 Tbsp Water
- 1 Tsp Vanilla
- Donut Pan
- Preheat the oven as instructed on the box mix.
- Prepare the box mix as instructed; however, replace the water with the iced coffee.
- Pipe the mix into a greased donut pan.
- While the donuts are baking, prepare the icing by combining the powdered sugar, water, and vanilla.
- Whisk this well to combine.
- Remove the donuts from the oven and let fully cool.
- Dip each one in the icing and serve.
