These Meatloaf Stuffed Peppers make for the perfect meal!
It’s nearly Christmas and I’m sure most of us are in full on baking mode, right? Typically we do a big baking day with all sorts of treats and deliver them to family and friends, but I’ve tried to really cut back this year.
Why? We are all trying to lose weight! I actually had everything ready to make and my grocery list planned out.
Then, I thought, why am I doing this when literally every person I’m taking this to is trying to lose weight right now?
So, I didn’t do it. It feels crazy, I do it every year and I did do a few goodies like the savory types, but not the sweets.
That means instead, I’m focusing on dinner ideas, like these Meatloaf Stuffed Peppers, while I try to tell myself not to eat all the cookies and candy!
Do you have this issue? I can’t resist cookies, I just can’t. I eat relatively healthy until you stick sweets nearby and then I cave. So, this past year, I was really working on my diet and exercise, but I got nowhere really.
The exercise was great, but my diet was ruining me and it’s those random little sweets or a piece of chocolate here and there that were adding way too many unnecessary calories.
I’m trying to get on the ball this year because I really need to lose a good 30 lbs that crept up on me somehow after I had my daughter. I won’t admit to my nightly ice cream treat.
It’s not a good sign when you weigh more…not pregnant…than you did when you were. ACK!
Have I made you guilty enough while you eat that Christmas cookie? Don’t worry, I literally got an email from a personal trainer to set up an appointment while stuffing my mouth with gluten-free chocolate cream cookies.
I had some serious guilt after that, then she asks about what issues I was having and wanted to work on.
Umm…well, maybe the cookies I just ate while typing this email. Whoops!
How do you make Meatloaf Stuffed Peppers?
Okay, so back to these Meatloaf Stuffed Peppers. If you are watching your weight, feel free to use ground chicken or turkey for this too, even ground buffalo is good in these and lean.
I saw these type of peppers made in a deli at our local grocery store and thought it was so clever, that I was going to try it with my own meatloaf recipe.
It worked out wonderfully and the meatloaf had a great flavor from the peppers. If you prefer a sauce on top, you can use marinara sauce or your favorite sauce, but we actually ate them without the sauce.
Are you ready for a bite? It’s time to eat some tasty dinner…and maybe some cookies too. Yes? No? Yes? No? Oh the willpower!
Meatloaf Stuffed Peppers
Ingredients
Meatloaf
- 6 Bell Peppers Amount will vary depending on the size
- 2 Eggs Beaten
- 2 Cups Quick Cooking Oats if GF use Certified GF Oats
- 1/2 Cup Evaporated Milk
- 1/2 Cup Chopped Onion
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Tsp Garlic Powder
- 2 lbs Lean Ground Beef
Sauce:
- 2 Cups Ketchup
- 1 1/2 Cups Packed Brown Sugar
- 1/2 Cup Chopped Onion
- 1 Tsp Liquid Smoke
- 1/2 Tsp Garlic Powder
Instructions
- Preheat the oven to 400*.
- In a large bowl combine the meatloaf ingredients.
- Cut the tops off the bell peppers and clean them out, then place the meat mixture inside each one to just over the top of the pepper and is full.
- Spray a 9x13 baking dish, place the peppers in the dish.
- Bake for 30 minutes at 400*.
- Carefully remove the dish from the oven.
- In a small saucepan, bring all sauce ingredients to a boil.
- Pour over each meatloaf.
- Return to the oven for an additional 30 minutes or until cooked all the way through.

I don’t eat meat, but I used to love stuffed peppers! I am all about repurposing leftovers and this is a GREAT way to repurpose meatloaf!
Oh my, these look good! I have made stuffed peppers a few ways, but I have never thought about stuffing them with a meatloaf recipe! I bet that would be so fun and delicious!
Two things I love with your meatloaf stuffed peppers…. the use of oats! And the fact that stuffing peppers means that you eat more vegetables! A really novel way to get in your 5 plus a day!
