It’s all those LEFTOVERS.
Maybe you are like me and you over plan? My biggest fear is not having enough food to feed everyone that stops by. We always end up with unexpected guests.
My husband tends to invite everyone and then let me know about it just before we have dinner, so now I have got used to it and plan for extra.
Sometimes though that means we have a lot of extra food, and we all know it gets old eating five rounds of ham and stuffing.

That’s why I love this trend of upcycled food. This simple means taking leftovers of food or transforming different parts of foods to create something new and tasty out of them.
For instance a good example would be using your leftover bread for stuffing or turning some stems of veggies into a nice fruit juice.
There are many ways to describe it although in the past, we basically would speak of it as recreating new meals from leftovers. This actually is a great way to cut down on waste too.
As a kid I remember my dad being so upset when we threw away a lot of food that we just didn’t feel like eating. I never fully grasp why this was so upsetting to him until I got older and became an adult.
Now, I get it of course there is the cost, it’s money basically thrown in the trash but then there is the humanity aspect. So many that have no food to eat and we are throwing ours in the trash? It doesn’t seem right, does it?
How do you make a Leftover Ham & Stuffing Frittata?
As you finish up those Thanksgiving meals, more than likely there will be a lot of leftovers.
During this time, it’s really easy to get tired of eating those same things over and over again. We’ve found though this Ham & Stuffing Frittata is one of our favorite ways to upcycle ham and stuffing.
Who would have really thought that you can reuse that stuffing? My kids LOVED this too. My son was begging for more.
Essentially, this combines, ham, stuffing, and eggs with a little bit of cheese, but Pompeian Grapeseed Oil Spray is what truly enhances the flavor.
What is the key ingredient to add flavor to Leftover Ham & Stuffing Frittata?
It’s Pompeian 100% Grapeseed Oil Spray. This spray is used to coat the dish before adding in the ingredients, plus coat it once the ingredients are all in the dish.
This spray is made from the seeds of wine grapes and it’s very rich in Vitamin E. It also has a high smoke point, which makes it a great choice for baking in the oven.

Leftover Ham & Stuffing Frittata
Ingredients
- Pompeian Grapeseed Oil Spray
- 1 Cup Diced or Chopped Ham
- 2 1/2 Cups Prepared Stuffing
- 3 Whole Eggs
- 3 Egg Whites
- 1/4 Cup Milk
- 1/4 Cup Shredded Cheddar Cheese
Instructions
- Preheat oven to 375*.
- Spray a baking dish, about 8x8 size or a round baking dish, with Pompeian Grapeseed Oil Spray.
- In a small bowl mix together the ham and stuffing.
- Place this evenly in the bottom of the baking dish.
- Whisk together the egg whites and whole eggs plus the milk.
- Pour evenly over the stuffing mixture.
- Top with cheese.
- Bake for 25 minutes at 375*.
- Serve.

We are full-swing in the middle of the COVID19 virus quarantine and I determined it was time to start clearing out the fridge and pantry. We had everything for this dish and I also included sautéed onion and spinach. My family absolutely loved it. What do you use egg whites for.nothing in recipe..
Whisk the whole eggs and egg whites together along with the milk.
Can boxed stuffing be used? Would I prepare it first, or put in dry? I have leftover ham to use up, but no stuffing prepared!
Yes boxed would work and I’d prepare it first.
I haven’t tried it yet but why so many eggs
The base of a frittata is eggs.
I had a pack of organic ham sandwich meat, a box of stuffing and this was the perfect easy meal. I added caramelized onions on top then put the cheese on top.
