Do you do meal prep earlier in the week? I am trying hard to do this throughout this upcoming year. I have started to cut up fruits and vegetables and prep them earlier in the week, that way I can easily pull meals together. I am doing the same with meats as well. In terms of this recipe, I already had the sweet potatoes cut and ready to add to the skillet as well as the kale. I had already cooked the chicken, so it was also ready to warm up.

Do you want another trick? I also like to build this whole meal and put it in a storage container. This way when I am ready to serve, I simply toss all the ingredients from the storage container in a bowl and warm it up. I can take it with me on the go too, simply place it back in the container and warm it up in the microwave before serving. It’s so simple, I just love all the great tips and tricks to eating better-for-you meals even in a pinch.

Sweet Potato & Kale Rice Bowl
Ingredients
- 1 Cup Kale Sliced
- 1/4 Cup Sweet Potato Diced & Cooked
- 1/4 Cup Grilled Chicken Diced & Cooked
- 1 Minute Ready to Serve Brown Rice & Quinoa Cup
- 1/2 Tsp Olive Oil
Instructions
- Place prepared kale, sweet potato, and chicken in a bowl.
- Heat the rice as instructed on the packaged.
- Mix the rice in with the veggies and meat.
- Drizzle with olive oil and serve.
