As we head into the summer season, the ‘unofficial’ start to summer is upon us, Memorial Day! That means it’s time to use MIRACLE WHIP and be proud of it, in foods such as this potato salad.
We like to have a big cookout or head to the lake and cookout there, either way we love spending time with friends and family on Memorial Day weekend. One of the best parts of the weekend is all that delicious food.
Today, instead of a round up post I want to focus on this new potato salad recipe that would be the perfect side for your cookout!
I recently tried a new twist on potato salad with this MIRACLE WHIP Kale & Apple Potato Salad. I started eating Kale much more frequently just in the last few months. I love it and probably now eat it a bit too much; however, it’s so packed with great nutrients and versatile too.
When I saw this recipe using it in the potato salad, I was definitely intrigued by it as I had yet to try it in potato salad. Not only that but also this potato salad only takes a few quick minutes to put together and uses very few added ingredients.
This potato salad went well above my expectations. I am actually planning to make it for several cookouts we have planned this summer not only Memorial Day. I am planning to make it for my son’s birthday too. I love the flavors of it; the apples too are an incredible addition. It is almost like a mix of a fruit salad and potato salad together.
Then, there is the Kale…oh the love of Kale. It just gives the salad a whole new element of deliciousness.
This recipe mixes the perfect amounts of MIRACLE WHIP with mustard and vinegar, not making it overpowering. I literally ate this for almost a week straight for lunch, I could of eaten the entire thing myself, luckily my family joined in to help so I didn’t do that!

- 3/4 Cup MIRACLE WHIP Dressing
- 1 Tbsp GREY POUPON Dijon Mustard
- 2 Tsp Cider Vinegar
- 2 Lb New Red Potatoes, Cooked, Cooled, & Cut in Quarters
- 4 Cups Kale, Coarsely Cut
- 1/2 Cup Red Onions, Thinly Sliced
- 2 Apples, Cored and Diced
- Mix the dressing, mustard, and vinegar until blended.
- Combine remaining ingredients in a large bowl.
- Add dressing to the mixture, and mix well.
- Refrigerate several hours or until chilled.
