Warm up with a delicious bowl of Instant Pot Pumpkin Stew!
I know most of you have your minds on Thanksgiving, but this Instant Pot Pumpkin Stew is the perfect way to enjoy an easy meal the night before Thanksgiving.
I always plan to make something simple the day before Thanksgiving because I know that I will be prepping foods all evening.
Do you have a particular way you plan out your Thanksgiving meals? I typically will make all the desserts on Wednesday night. I also try to get any other side dishes planned as much as possible too.
I find though those taste best right out of the oven. Thanksgiving is the one day my double oven gets a full workout! It’s probably long overdue too because I have been using my Air Fryer and Instant Pot so much…it needs some use.
That means today is Instant Pot Pumpkin Stew day around here. This is so simple to make all in one pot!
Tips for Making Instant Pot Pumpkin Stew
The stew meat can be cooked right in the Instant Pot using the saute function.
I typically do not drain it unless there is an excess of oil, otherwise, it just adds to the flavor. I also do not drain the other ingredients because it all adds to the sauce and flavor.
Instant Pot Pumpkin Stew is very similar to Instant Pot Pumpkin Chili, it’s simply a swap of meat and using stew meat instead.
I love the texture that the stew meat adds to this dish, it’s a thick, warm meal that is perfect on a cold, wintry day.
What should you serve Instant Pot Pumpkin Stew with?
Our side of choice is the Gluten Free Homemade Cornbread that I just shared on Monday. It’s what we pair with this each time we make it.
It makes for a classic meal this winter. The best part is the Instant Pot Pumpkin Stew is ready to go in just about 20 minutes or less.
If you are in a hurry, simply serve it with some corn chips and you will be set in 20 minutes, otherwise, the cornbread takes about 35 minutes.

- Beef Broth
- Chili Beans
- Ketchup
- Diced Onion
- Crushed Garlic
- Pumpkin Pie Spice

Instant Pot Pumpkin Stew is a great way to mix up that traditional Beef Stew, although that’s on my menu soon too!

Instant Pot Pumpkin Stew
Ingredients
- 1 Pound Beef Stew Meat
- 2 15 oz Cans of Chili Beans
- 1 15 oz Can Beef Broth
- 1 10 oz Can of Diced Tomatoes
- 1 Cup Pumpkin Puree
- 2 Tsp Pumpkin Pie Spice
- 1/4 Cup Diced White Onion
- 1 Clove Crushed Garlic
- 1/2 Cup Ketchup
Instructions
- Place the Instant Pot on saute function and brown the stew meat.
- Once fully browned, add in the remaining ingredients, then stir it together.
- Place the lid on and in the sealed position.
- Cook on manual high pressure for 5 minutes.
- Quick release the steam and serve.
