The days are filled with work and school lately, and then after school is homework and activities. So, when do we eat? I’m not sure anymore!
I will admit, we scaled back a bit. I just couldn’t do it. What does that mean? Less activities! These Instant Pot Chicken Fajitas will make dinner simple.
Our son is about to start basketball season and was also thinking about doing karate, but we had to pull back on something so it ended up being karate.
On the one hand, as a mom I feel bad, I want him to do everything he wants to do, but as far as family and home life go, we can’t do it all.
It is healthy for our family to be home a little bit during the week and not rushing from one thing to another, plus it isn’t good on the kids either.
I figured if I was feeling stressed and overwhelmed, surely they must be feeling that in some ways too.
How to Make Instant Pot Chicken Fajitas
He was a little sad at first but he did understand it, I think because he was feeling it too.
The constant running situation, the constant mom being so stressed that she can’t even hold a normal conversation anymore…he felt it. I felt it. We all felt it.
Something had to give… so there it is.
Now, we have a few evenings a week at home again and goodness it’s so refreshing to just be able to do things together like go on evening walks.
In the midst of that, I’ve also started to use my instant pot and slow cooker on those busier nights regularly so that I’m not adding any more stress to myself.
These Instant Pot Chicken Fajitas made just the quick meal we needed before going on with the rest of our evening.

Instant Pot Chicken Fajitas
Ingredients
- 4 Medium Sized Boneless, Skinless Chicken Thighs
- 4 Bell Peppers Sliced (Multi-Colors)
- 1/2 Cup Diced Onion
- 1/2 Tsp Chili Powder
- 1/2 Tsp Cayenne Pepper
- 1/2 Tsp Paprika
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Cup Chicken Broth
- Salt/Pepper to Taste
- Tortillas
Instructions
- Place chicken on bottom of Instant Pot.
- Top with the veggies and spices, evenly.
- Pour 1/2 cup chicken broth over the ingredients.
- Pressure cook for 12 minutes.
- Release pressure and serve on tortillas.

Pressure cook on high or low?
This will be manual pressure on high.
I enjoy your recipes but if I pressure cook boneless chicken thighs in my Ninja foodi for 30 minutes I think they may shrivel up and disappear. Will you please double-check cook time?? I would really like to know how to make Fajitas this way
I have always done these for 30 minutes, I have adjusted the time though as they should be done after 12 minutes. Be sure the internal temperature is at least 165*F.
