As summer heats up, so does our need for snacks and some extra protein. This Honey Butter Trail Mix will hit the spot, combining both a nice crunch plus a dose of protein. I’m sharing this recipe in partnership with Mom’s Best® Cereals, all thoughts and opinions are my own.
Several months back now, my kids and I were doing a little bit of grocery shopping at our local grocery store when we noticed Mom’s Best Cereals. This was the first time that I had seen them at our local store and immediately when I realized they carried several gluten-free varieties, I was hooked.
As we are right in the midst of all the summer fun, one thing I realized is that we need snacks basically at all times.
I was thinking through snack items to make them, immediately a good trail mix came to mind. I wanted it though to have a bit of extra protein and since my kids really enjoy peanut butter, I thought the addition of peanut butter would do just the trick.
This recipe is actually a great one to get your kids involved in the kitchen with you too. My son is extremely interested in cooking with little assistance lately; he just recently realized he could use the toaster oven, which has now opened up a whole new world for him. I am not kidding, every 5 minutes he is asking if he can make us some more toast. I was a little too excited when I decided to try out this recipe because it allowed him to help me and it was something outside of toast!
We combined, brown sugar, peanut butter, and butter in a small saucepan to soften the peanut butter, and then I added in 6 cups of the Mom’s Best Honey Grahams. Now, let that sink in for a minute, peanut butter coated honey grahams. They are absolutely amazing! My entire family was more than happy to just eat those without the rest of the mix.
Once I had the cereal and peanut butter mixed together, I poured it into a parchment paper covered pan and let it harden for about 4 hours.
Once it was nice and hard, we broke it apart like a bark and combined it with the rest of our ingredients. This mix is perfect to add to little bags for traveling or store in mason jars. I love storing ours in mason jars, my kids each get their own jar and it works out perfectly for a snack while we are at home. If you are on the go though and want to avoid glass, just use a little sandwich bag. This is not only great for summer but also when you head back to school too as a snack.
There are many reasons why I choose Mom’s Best® Cereals for our family one of those being that their cereal has no high fructose corn syrup, no hydrogenated oils, and it’s free of artificial flavors and preservatives. It’s truly the better choice for our family. I absolutely love that they stand behind an affordable price point, making eating better at a reasonable price doable for families.
