One of my favorite healthy dinners is Chicken Fajitas. I love these because you can add as many veggies as you want to them. The recipe that I have for Chicken Fajitas is already a low fat recipe; however, to make it even healthier add additional veggies or serve it with a side of roasted veggies instead of rice.
