Healthy Homemade Vegetable Soup Recipes

Cold weather is somehow made bearable by soup, and because winter usually translates to colds, coughs, and fever, the healthy and nutritious kind of soup is the preferred choice to serve in the chilly weather. A healthy vegetable soup recipe, for instance, not only helps to strengthen the immune system but warms the body and nourishes it against infectious diseases. Soup can be filling, so much so that cooked with healthy ingredients, they keep you full much longer.

Healthy does not mean tasteless, though, because fresh produce, contrary to what commercially-prepared foods offer consumers, do not need seasonings, additives or even artificial food enhancers, simply because their freshness ensures their natural, delicious flavours are in sync with other ingredients. Here are some culinary preparations that can double as easy appetizers with main meals which can lift up spirits during the blustery days of snow and ice.

Giving the Usual Soups Some Interesting Twists

Have Vegetable Chili made with pureed pumpkin, chili powder, cumin, black beans, and bulgur wheat. This is homemade chili at its best, sans the potential cholesterol when using ground beef. You can substitute shredded turkey for the red meat. Serve hot and piping with crusty rolls of bread generously spread with garlic butter.

Spring Chicken Soup makes use of, what else, spring chicken! This is a simple chicken soup recipe made special with the addition of thinly-sliced zucchini, cubed yellow squash, green peas, and orzo, and flavored with dill and a lot of scallions. A proven comfort food in cold weather or when someone in the household is down with the sniffles.

Light Soup and Hearty Soup

Robust, aromatic, and tasty, Beef with Mushroom and Barley Soup is loaded with fiber but low in fat, the perfect rustic concoction for when the sun isn’t shining and there’s frost on the windows. Made from lean cuts of beef chuck, fresh tomatoes, barley, sliced white turnips, julienne carrots, shallots, shiitake mushrooms, and dill, this hearty soup can be a meal by itself.

There’s Minestrone, and there’s Minestrone Tuscano and it’s simply mouth-watering! Protein-packed and loaded with nutrients from vegetable ingredients, this particular take on the traditional Italian soup has the usual broccoli, zucchini, green beans, tomatoes, cannelloni beans, and macaroni but with the interesting addition of mushrooms, baby corn, and grated onions. Who said Minestrone can’t take on another variation?

Two Different Takes on Two Traditional Recipes

And you thought cauliflower cannot be in a soup? Well, how about giving this Indian-inspired Cauliflower Soup bursting with the unexpected flavour of curry? Minced garlic, onions, spinach, chickpeas, carrots, and tiny cauliflower florets simmered in chicken broth and seasoned with fresh green curry will make a drab winter’s night into a warm evening with just the accompaniment of plain broiled chicken and stacks of papadum.

Nothing is comparable to soup stock that is homemade. With less sodium than the canned variety, this Sopa Portugues or Portuguese Soup has the rich taste of cabbage, white beans, marble potatoes, Arborio rice, and thick and chewy Portuguese sausages that are heavy on protein but light on the fat. This what Portuguese sailors ate regularly since the seafaring days of Henry of Navarre and it is, truly, a meal by itself.

    Throw in all the fresh veggies that you have into a pressure pot-not to forget red kidney beans- cook for 30min-server pipping hot with panini-delicious for the cold days that we are having.
