Many of you are still trying to clean up from Thanksgiving while the rest of us are probably planning for Christmas now. One dish that I tried over the holiday helped me to stay on track with healthy eating, it was this wonderful Sweet Potato Harvest.
Of course, sweet potatoes are at the top of my list for foods to serve for Thanksgiving and Christmas, but my family likes to eat them year round too. Although I do love a good sweet potato casserole, I also like to make them a little bit lighter. This Sweet Potato Harvest blends several veggies with Zesty Italian Dressing then you simply pop it in the oven to bake.
The best part is I actually saw this recipe in the new Sam’s Club Healthy Living Made Simply Magazine. It is an app that can be downloaded straight to your phone. I enjoyed reading several parts of this magazine including the calorie difference in lighter foods vs heavier foods for Thanksgiving.
One that really caught my eye was the turkey with the skin versus the turkey without the skin. Let’s just say you save a lot of room if you are counting calories by skipping the skin. That’s a sad day for me because I sure do love the skin. I always knew there was a lot of calories in the skin on meats, but I did not realize just how much until I browsed through this magazine.
As I was at Sam’s, I simply pulled up the recipe for Sweet Potato Harvest on my phone, which made it easy to get exactly what I needed for it. Plus, since they sell more for less at Sam’s Club, I was able to stock up on more produce for the upcoming parties and dinners.
This dish took just under 45 minutes to make and it was the perfect alternative to a heavy sweet potato casserole. This is also a great side dish for family dinners throughout the week too. There is also lots of information on why sweet potatoes are a super-food as well, check it out here.

Sweet Potato Harvest
Ingredients
- 2 Medium Sized Sweet Potatoes Cubed
- 2 Medium Sized White Potatoes Cubed
- 1 Small Onion Chopped
- 1 Medium Bell Pepper Chopped
- 4 Tbsp Melted Butter
- 1/2 Cup Zesty Italian Dressing
- 1 Tbsp Hot Sauce
- Salt/Pepper to Taste
Instructions
- Preheat the oven to 350*.
- Spray a 9x13 baking dish with non-stick spray.
- Mix all the ingredients and pour evenly into the dish.
- Cover and Bake at 350* for 20 minutes.
- Carefully remove, uncover, and stir.
- Bake for an additional 15-20 minutes uncovered.
- Serve.
