I’ll let you in on a secret now, I’m terrible at planning lunches! I can menu plan in my sleep but typically since lunch time is just me, I fail at planning lunches. I usually eat whatever is left from dinner; however, I have an extremely picky eater that only eats a couple different items so I really need to work to expand his options especially at lunch! This past week, I decided to try out the Tyson Grilled & Ready Chicken in a wrap then turned it into pinwheels for my picky eater. Success? Read on!
I picked up the Chicken Breast strips and was anxious to try this out not only on these wraps but also easy salads throughout the week for lunch. They just take a few seconds to heat up and they taste really good! My husband tasted them and was shocked that they were frozen chicken heated in the microwave! That’s a good sign because we are picky about our frozen food. I was anxious to try this out because it provides protein for lunch plus it’s healthy.
So, back to these pinwheels. I knew my picky eater would love tortillas and cheese but I really wanted to attempt to get him to eat some veggies. I opted to use guacamole for the sauce then add in the chicken and spinach.
These take less than 2 minutes to prepare simply start by spreading the guacamole on the tortilla then top with cheese, spinach, and chicken. Next up, roll the tortilla and place toothpicks in it to hold it together. Then, I simply sliced it to form pinwheels.
Now what did my picky eater think? I’ll admit I was very skeptical, if I didn’t have pictures of this I would not have believed that he actually ate it. Literally he likes pepperoni, hot dogs, and sausage. He never wants to eat anything but that so I was shocked to say the least when I saw this…
He ate it…then he was happy!
This is where mommy starts secretly giving herself gold stars and doing a victory dance. The little things in life that make me smile!
I went ahead and put this in Ziplist format; however, the amounts will vary based on how many you want to make. Also, you can add and take away items to make the perfect pinwheel for you!

Guac and Chicken Pinwheels
Ingredients
- Flour Tortillas
- Tyson Grilled & Ready Chicken
- American Cheese
- Fresh Spinach
- Guacamole
Instructions
- The amounts of each will vary based on how many you want to make.

- Next roll up the tortilla and put toothpicks evenly along it to hold together. Then, slice to form the pinwheels.

Awww, you son is so adorable!!!! I had picky eaters too when my kids were growing up. I do love how versatile the Tyson chicken is, so many different ways to use it. Your lunch looks delicious, and love the idea of making wraps. Yummy!!!

Oh my goodness! It is amazing what you can do with Tyson Grilled and Ready strips! I seriously would have never thought of this as an option, you are incredible! (And your son is adorable!!!)
