Whether it’s a quick lunch or a light dinner, this Grilled Chicken & Kale Pita Sandwich can come to your rescue!
Do you ever need a quick lunch or lunch in a hurry? I mean really who doesn’t? When I worked in corporate world, I would cram as much as I could into my lunch hour. All those errands and things that I really did not want to do after work. Then, I eventually cut my lunch hour to half an hour so I could just leave early! That meant, I always needed a quick lunch.
Now, I work for home, but even so, I’m really a focused person so I get in the work mode and it’s hard for me to break away for lunch. This past week, I grilled up some chicken to make delicious sandwiches for lunch. I decided to make my husband a few with Pita bread because he absolutely loves it!
These are SO simple to make with Kale, Hard Boiled Eggs, Tomato, and Grilled Chicken. What I love to do with the Kale is toss it in just a drizzle of olive oil and a pinch of garlic salt. This gives it some taste and makes it softer. Once I have my kale done, I stuffed it in the pita and added the remaining ingredients. Of course, you can add a bit of dressing to it as well. I have found it is wonderful drizzled with Italian Dressing!
My husband ate these up and I had mine with a gluten-free bread option. I was ecstatic to see that he LOVED this healthier take on lunch.
