Summer is just around the corner, can you taste it? I am pretty sure summer at our home tastes a lot like these baby back ribs. The summer months around here mean lots of cookouts and delicious homemade ice cream.
We enjoy having friends and family over – especially when it’s hot outside because my husband loves grilling and smoking meats to share. One of our go-to summer meals is grilled baby back ribs. They are so simple to prepare, then when you grill them just right, they are super tender.
Our two-year-old daughter could not wait to dig into these. Now, this was a shocker to us because our son will not touch ribs, but my daughter licked the bone clean.
We like to let ours marinate overnight with a nice rib rub, then we coat them with BBQ sauce just before placing them on the grill. I generally let them grill for about 20 minutes. They can be served as-is or with a side of additional BBQ sauce or Ranch dressing.
We love to serve these ribs with coleslaw, potato salad, and baked beans. Can you say perfect cookout? Once all the kids are coated in BBQ sauce, it’s time to play in the sprinkler or take a dip in the pool. Then, once they are all nice and tired from that, we all end up eating some delicious ice cream. That is why I love summer. Of course, the Oklahoma heat is a completely different story.
Baby back ribs are a staple at our cookouts and ribs in general. I love baby back ribs though, because for me they are easier to eat, plus I feel like I get the perfect portion size.
