I am sure by now, most of us are starting to get into a routine between work, school, and all those extracurricular activities; however, it’s also necessary to carve out family time too. I am the type of person that needs quality time, or I’m just really not that happy. I find it’s necessary for me to have some down time each week with my family to basically recharge myself for the week, plus it helps us as a family too. One way that we’ve had fun doing that lately is by having a little bit of family game time plus making a tasty snack to eat as we play games too.
Lately, we have been rotating between board games and video games, that way our kids still know and love the board games we do, but we also enjoy some video game time too. I decided to make some Grape-Nuts® Muffins to pair with our family game night because, of course, a snack is necessary. Grape-Nuts have been around since 1897; they are staple that obviously people love because they have stayed around for so long. They are power-packed, whole grain, non-GMO, plus vegan too. They also are packed with protein.
My husband and kids enjoyed these muffins as we had our family game night, plus they were getting a nice boost of protein too.
I made these using banana as the base, which gave them a delicious banana flavor paired with a little bit of vanilla too. Then, I not only filled them with Grape-Nuts, but I also topped them with nicely toasted Grape-Nuts too. They came out beautiful and delicious. It’s even better that muffins are easy to eat while you are playing video games.
Friday nights tend to be our family night, do you have a specific night? I look forward to Fridays every single week because I know we will spend some time outdoors in the evening and then come in for some family game time. That family time helps me decompress from the week, plus get ready for a fun and hopefully relaxing weekend too.

Grape-Nuts Muffins
Ingredients
- 1 1/2 Cups All Purpose Flour
- 3/4 Cup White Sugar
- 1/2 Tsp Salt
- 2 Tsp Baking Powder
- 1 Tsp Vanilla Extract
- 1/3 Cup Vegetable Oil
- 1 Egg
- 2/3 Cup Milk
- 1 Medium Sized Banana
- 1/2 Cup Grape-Nuts Cereal
- Additional Grape-Nuts Cereal for Topping
Instructions
- Preheat the oven to 400* degrees.
- Spray a muffin pan with non-stick baking spray.
- Add the flour, sugar, salt, and baking powder to a medium sized mixing bowl.
- Mix in the vanilla, oil, egg, and milk until combined with the flour mixture.
- Mix in the banana and Grape-Nuts cereal.
- Fill each muffin tin about halfway with the batter, spread to fill.
- Top with additional Grape-Nuts cereal.
- Bake for 25 minutes or until browned.
