Make dinner simply but unbelievably delicious with this Gluten Free Shrimp Scampi with Spaghetti Squash!

During the summer months, I happen to love light, simply meals. Maybe you do too? Recently, I have fallen in love with Gorton’s Everyday Gourmet Products, specifically the shrimp. I was able to pick up Simply Bake Shrimp in the Classic Scampi variety, which happens to be gluten free too. That means we can easily all enjoy them in our family in this Gluten Free Shrimp Scampi with Spaghetti Squash.

We’ve been doing pretty well with our garden this summer, so I try to add in fresh produce as much as possible to meals during the week. It’s so nice to be able to let the kids swim and know that I can get dinner done in minutes, so we stay outside and linger longer during these summer months.
I decided to top our spaghetti squash with the Classic Scampi. It has a delicious buttery flavor which complimented the spaghetti squash so well. I added just a bit of garlic salt to the spaghetti squash, but the sauce the scampi is in was all I needed to add to the spaghetti squash to make this delicious Gluten Free Shrimp Scampi with Spaghetti Squash.
Once you have it all ready to serve, simply add some sliced lemon on top and parsley, then you have a delicious dish ready to serve. The best part is that you can make this delicious seafood dish any night of the week. It only takes about 30 minutes to make and dinner is ready to serve.

- Gorton’s Everyday Gourmet – Simply Bake Shrimp, Classic Scampi
- Spaghetti Squash
- Garlic Salt
- Lemon
- Parsley
That’s it! This is a one-dish dinner, the protein and vegetable are both covered. It’s also incredibly low-carb too. We love to substitute spaghetti squash for pasta to cut back on carbs, so this is a win in our household!

Gluten Free Shrimp Scampi with Spaghetti Squash
Ingredients
- 4 lb Spaghetti Squash
- 1 Box of Gorton's Seafood Simply Bake Shrimp Classic Scampi
- 1 Tsp Garlic Salt
- Sliced Lemon
- Parsley
Instructions
- In a dutch oven or steamer, begin by fully steaming the spaghetti squash. Once it is steamed, scrape out the seeds with a fork. Then, use a fork to scrape out the remaining spaghetti squash and set aside.
- Preheat the oven to 350*.
- Place the bags of shrimp window side up on a metal cooking sheet.
- Bake for 30 Minutes.
- Carefully remove.
- Cut open and pour the shrimp and sauce into a bowl.
- Mix 1 Tsp of Garlic Salt in with the spaghetti squash.
- Serve the shrimp with sauce over the bed of spaghetti squash with sliced lemon and parsley.
