In our house lunch is always a big deal, more so for me because I eat gluten free! When I went gluten free I thought I would never eat an easy sandwich again, that was until I discovered Udi’s! I absolutely love Udi’s products, my favorite choice of their bread is the Millet-Chia. I could eat this bread all day long, it’s soft and delicious just like a gluten filled bread!
Recently, Udi’s sent me a few products to try for lunch and those included my favorite the millet-chia bread, cookies, granola, and Glutino pretzels.
I thought I would share with you a few ways we use these products!
First, I absolutely love these Seasoned Pretzels and to make them gluten free I simply replaced the pretzels with Glutino Pretzels!
Next up, we love great snacks and yogurt with granola tops the list of snacks for us. Not only is it healthy but it’s also delicious! I make these peach parfaits regularly with gluten free granola. I also like to mix it up and use different fruits that I have on hand.
Now, it’s time for a tasty sandwich that I love to use the Millet-Chia bread for. I will either use my classic chicken salad or my dill chicken salad then top it on the millet-chia bread.
As for the Udi’s cookies, I could just eat those by myself! That ends my delicious lunch and is always a tasty treat.

That chicken salad looks DIVINE!
I’m so happy you were able to finally get Udi’s GF breads. I’m your fan that used to work for Udi here in the Denver metro area. Have you tried Udi’s GF hot dog and burger buns? Frozen pizza dough?
Your chicken salad looks wonderful.
Yes, I’ve tried it all and love it. I just saw today actually that they have the frozen pizzas already made now in gluten free. Such a great thing for those that need something quick and can’t have regular frozen pizza!
