Do you enjoy breakfast for dinner?! My family has breakfast for dinner at least once a week! It’s generally on the nights when I need to get to the grocery store but the chances of that happening are slim, so I open up some sausage, eggs, and call it good!
Some nights though, I like to make something simple and creative, plus an easy on the go breakfast for the next morning!
This past week I whipped up some scrambled eggs and Johnsonville Sausage, then I mixed it together and filled up a taco cup to serve it in.
Along with that delicious sausage and eggs, a nice helping of salsa and a bit of cheese complete the taco cups!
These are so simple to grab and go, because you can either eat the inside filling with a fork or we prefer to just bite into it! I love the crunch the taco cup gives to the filling. Simply perfect!
I used round Johnsonville sausage then I just sliced it into small strips and mixed it into the eggs. We were able to fix the sausage and the eggs on a griddle while the taco cups were in the oven.
This is a simple breakfast dish that can be done under 15-20 minutes!
These are almost like inside out breakfast burritos!

We love Johnsonville sausage ! We use it all the time when hubby makes his semi homemade pizza. We get the crusts from Papa Murphy’s Pizza, then add sausage and a boatload of toppings.
The breakfast cups look really yummy.
