This past week we had a lot to pick from our garden. Most of the veggies consisted of peppers. We may have went a little overboard on the pepper plants this year. We also have loads of tomatoes. My husband and I are planning to make salsa today and homemade tomato sauce then can it. It will hopefully last us a while.
We also ran into some problems with our corn, we were able to salvage a few ears of it, but it appears that bugs and worms got to most of it. I guess next year we need to figure out what to do to keep the worms off it, they had a feast!
Our neighbor also brought us over tons of okra. We have a bunch in our garden too; however, he planted a lot more than we did. I plan on roasting this, so look for a recipe coming soon! My husband is all about fried okra but I am determined to keep it healthy!

We have a great okra option…slice the tops off and slice the okra in half length wise. Drizzle with olive oil and sprinkle with turmeric and rock salt. Bake in oven at 350 for 40 minutes..flipping once and if needed add more seasoning and olive oil…it is delish and better for u than fried. It makes for a great snack!
One note on the above…the turmeric / olive oil combination will stain your pan…not to mention your hands…so either use older pans that won’t be negatively impacted by further stains or line your pans with foil.
That sounds delicious!! I did some this weekend with olive oil and garlic salt but never thought to do tumeric. Great idea!
