Are you camping this summer? We are! I should say my husband and son are.
I don’t get along with nature…at all! You know how I camp? In air conditioned, king size bed, full kitchens, full bathrooms…cabins! That’s how I camp!
I’m perfectly fine admitting that too. I just am not one with nature…I think it hates me sometimes.
My husband is perfectly happy going without me, really he’d prefer that too. It is sort of like me taking him shopping, I love him…but I would rather do anything aside from having to take him with me to go shopping. He complains…the entire time.
So…I do the same to him only it’s when sleeping on the ground outdoors is involved!
We went on vacation last week and stayed at a wonderful cabin in southern Oklahoma. It was beautiful! We also ended up having a fully stocked kitchen so we brought a lot of our own food; however, we really wanted to stay outside and do outdoor cooking.
That leads us to these foil pack veggies!
We love doing foil pack veggies during the camping months. Even if we aren’t camping this is usually how we do side items to grilled meats! I heat up some beans then add some foil pack veggies and we are set for sides!
I like to pack my veggies with produce from our garden then coat it with some olive oil and crushed garlic. We let it cook for close to 20-30 minutes to get it nice and toasty!
Once they are done…they are soft, tender, and delicious!
I want to know though, how do you do foil pack veggies?
Seasonings? Toppings? Veggies? What do you use!
In the meantime these veggies are so easy there is really no need for a recipe today, simply pick your favorite veggies add garlic and olive oil…pack, wrap, and grill!

My mom used to do something she called hobo packs. It was a combo of things potatoes, carrots, and onions. But she also would cook a hamburger patty with all that. My mom also used basic seasoning salt and pepper with some butter. Not anything special but it was really good. All the flavors just seem to become one and flavor the burger. It also works great doing it in a pan and not in individual packets.
Oh hamburger with it sounds delicious!
