After my past experience with Fish Tacos, I thought I would take these up to a new level. That level had to include Corn Salsa of course. I have a new found love for Corn Salsa. It makes all things taste so much better!
I cooked 2 White Fish Fillets, I used tilapia in a skillet with a 1/2 tablespoon of Olive Oil. Once the fish was easily flaked with a fork, I took half of the fish and placed it on a flour tortilla. I topped the tortilla with prepared corn salsa, then I drizzled my Saucy Mama Santa Fe Creamy Chipotle sauce on top.
This is definitely the way to eat a fish taco, it gives it such a great flavor. I also added a few extra pieces of cilantro to add even more flavor to them.
If you do not have the Saucy Mama dressing, substitute for your favorite chipotle dressing.
