It’s summertime and that normally means dinner may be in a rush or maybe older kids are staying home and need something quick and tasty to eat? Now, to make this, I simply added ground beef to the mixture and then poured it onto tortillas in a casserole dish. Once I had it topped with cheese, I baked it for a few minutes in the oven and out came a delicious dinner. This is one of those that is so easy to prepare, you can do it in mere minutes, but you can also teach your teens too. Maybe they will have dinner ready for you when you get home from work? Does that happen? I’m secretly hoping it does when my kids get older, but maybe that’s wishful thinking?
I remember as a kid my sister would watch me and she always made Mac & Cheese, I would have loved to have some of these meals. They are just as easy but so much more filling and tasty. I tried several of the gluten-free varieties such as the Cheesy Broccoli and they were fabulous. My son couldn’t wait to eat that! We had enough for at least 8-10 people using the Enchilada Beans & Rice mix, it was more than enough for our family of 4. I loved that we had leftovers though for the next day, it made my week easy.
They have 19 entrees and 4 breakfast varieties and all are made in the USA. If you store them properly they can last up to 25 years! That means they are great to have in storm shelters or in place for emergency situations as well.

Enchilada Beef & Bean Casserole
Ingredients
- Legacy Foods Enchilada Beans & Rice Mix
- 1 lb Ground Beef
- 6 Corn Tortillas
- Shredded Colby Jack Cheese
Instructions
- Preheat oven to 350*.
- Prepare the mix as instructed.
- Brown the meat in a medium sized skillet on medium-high heat.
- Drain the meat and add to the mix.
- Spray a 9x13 baking dish with non-stick cooking spray, place the tortillas evenly on the dish.
- Pour the mixture on top of it, evenly and add cheese.
- Bake for 10 minutes and serve.

I would like to try this recipe only one problem I’ve never heard of Legacy Beans and rice . Happen to live on the West Coast, Never heard or have seen this Product out here….
