Today’s Emeril recipe is Chicken in a Pot, from his new book Sizzling Skillets. This recipe was essientally very similar to roast, using a chicken fryer though as opposed to the roast. I did not loose my mind with this one, it was easy and the ingredient list was minimal. That’s perfect for my way of cooking, plus it used the slow cooker which was even better!
It also included bacon that I placed on top of the chicken. This dish was more like something I would make regularly and likely will be made again. It was easy to prepare and then I let it cook in the crock pot for several hours. My husband and I both loved this one and the tenderness of the chicken and veggies. The chicken fell right off the bone which is my favorite. The glaze that was on the veggies also made this dish more delightful.
I prefer glazed, soft veggies and these really soaked up the flavors from the chicken. I also like that part of it included dry white cooking wine, I found that to be a nice choice instead of using chicken broth. I may be trying that on other recipes as well.

Love just about anything that comes out of the slow-cooker. This looks wonderful!
Looks great and the crockpot is my best friend this time of year.
I did make this dish and it turned out wonderful! Very easy and just don’t use cooking wine ,just use Chardoney. And it will be better cooking wine is filled with salt!
