As we head into the new year, eating right is at the top of my resolutions. One way to do just that is by enjoying this Egg Topped Sweet Potato Toast as a quick snack or meal.

A trend that has been popping up lately is Sweet Potato Toast. Have you seen this yet? I have really been anxious to try it because there are a thousand different ways to top your Sweet Potato Toast and it looks so simple to make too. I decided to try it this past week with this Egg Topped Sweet Potato Toast.
This past year, I have really tried to get my health on track. I did well too, staying consistent with the gym and my workout; however, I did fall off the wagon in the past few months with my eating habits. I am now trying to get back on again. I have decided it’s a daily decision, each day I have to remind myself what I should and shouldn’t eat. I wish it wasn’t that way, but it is for me. One thing I have noticed that I do have too much of is the unhealthy carbs and not enough protein.
Guess what? This Egg Topped Sweet Potato Toast solved both of those problems with one little snack. Sweet Potatoes are a great healthy carbohydrate that is loaded with Vitamin A too, then eggs are also great for you and packed with protein.
I absolutely love the hard-boiled eggs from Great Day Farms, they are available at local Walmart stores. I have found them with the deli items and also with the eggs as well. The best part? They are already peeled. I love to use them for this Egg Topped Sweet Potato Toast but also on sandwiches and salads.
My daughter enjoys eating one with breakfast and it makes it easy on me because I don’t have to do much work since they are already cooked and ready to go.
Now, to make this tasty Egg Topped Sweet Potato Toast, all you need to do is slice the sweet potato lengthwise. This would need to be thin enough to be ‘toast’ style. Then, you will put it right in your toaster and toast it like you would bread.
Once it’s done, you can top it with a spread of Hummus, sliced Great Day Farms Hard-Boiled Eggs, Spinach Leaves, a bit of shredded bacon, tomato.
Once you are done, you have an easy, quick snack that is super tasty and a better-for-you option as well!

Egg Topped Sweet Potato Toast
Ingredients
- 1 Sweet Potato Sliced Lengthwise
- Hummus
- Great Day Farms Hard-Boiled Egg Sliced
- Tomato
- Spinach Leaves
- Shredded Bacon
Instructions
- Place the sweet potato slice in a toaster on medium heat and toast as normal. It may take a couple rounds to get it soft.
- Carefully remove and spread a bit of hummus on it.
- Top it with sliced egg, tomato, spinach leave, and shredded bacon.
