Is this week over yet? Surely it is, right? This has been quite a whirlwind week for us. It seemed to start off just fine, then my daughter ended up in the hospital. Yep, 3 days later, we are home now and recovering. I thought she had a virus, then it got progressively worse and started to resemble the severe UTI that she had over the summer. Sure enough, as soon as the test came back in the doctor’s office, they were admitting us to an extended stay at the hospital to get her back to good health. We learned while we are there though that her bladder and kidneys are not working as they should, so we will be back in 2 more weeks for more testing to get everything corrected.
We still have a road ahead of us, but I’m thankful that for now she is on the mend, I just want to be sure that we do not end up in this situation again, it was pretty scary for a while there! In the midst of that I knew that as soon as we got out of the hospital, cookies were on our menu. She had been asking for cookies while we were there, but she just could not stomach anything. I ended up stopping at Sprouts and picking up Immaculate Baking Products Gluten-Free Cookies. Have you tried them yet?
I absolutely LOVE that there is a gluten-free cookie that the dough is already made, all you have to do is put them on a cookie sheet and bake! We made the Chocolate Chip and Peanut Butter Cookies, then we decided to dip them in chocolate and coat them with holiday sprinkles. Once you are done, it’s easy to bag them up and deliver to friends and family! I’m sure we could all use a tasty gift of love every now and then, right?
We loved melting the chocolate and dipping them, my favorite were the peanut butter with the chocolate coating, so yummy! It was a great way to get the kids involved too, this is one of those recipes where the kids can easily assist and help out along the way.

Chocolate Dipped Cookies
Ingredients
- 1 Package Immaculate Baking Gluten-Free Cookies
- 1/2 Cup Chocolate Bark Melted
- Christmas Themed Sprinkles
Instructions
- Prepare the cookies as instructed on the package, any flavor will work.
- Once they have cooled, dip each cookie in the chocolate and place on a piece of parchment paper.
- Immediately sprinkle with sprinkles.
- Let harden and serve.
