Get ready for a new family favorite as we head back to school with this Chili Dog Casserole!

It’s almost time for the kids to head back to school! Are you ready or do you wish summer would last a little longer? I’ll admit that I’m a little torn. I am sad for summer to end, but it was a nice break and now I’m ready to get back to our routine. I’m not ready though to get up early every morning again. Back to school though means back to needing some quick and easy meals for dinner, just like this Chili Dog Casserole.
What makes this Chili Dog Casserole even better? It is made with State Fair® Corn Dogs! I decided to use the Classic Minis Corn Dogs for this recipe. It’s almost like having a chili and corn bread in a casserole. Plus, it’s the best comfort food as we head into the fall season as well.
This dish is just 4 ingredients and I was able to pick it all up at Walmart. There is also a great shopkick offer here too! Wouldn’t that be a fun way to end summer? Shopping or movies! I think so!
State Fair Corn Dogs have at least 5 grams of protein per serving, plus they are made with real meats. There is even an all-beef option as well. The part we love the most? They are dipped in a honey-sweetened batter. When this is mixed in with the chili beans and cheese, it melts in your mouth!
My kids love this as does my husband, we love chili and this just puts all the things we love about chili in one dish. It’s a great simple meal, pairs well with a vegetable of your choice too. We typically serve it with a side of corn. That seems to be the kid-approved vegetable around our home. Do you have one you tend to lean toward when adding a vegetable to dinner?
I decided to use a mixture of chili beans for this dish as well, with pinto and kidney beans. It gives it a nice texture and flavor too. It can even be made with leftover chili too. This is a great way to use up some leftovers and make an entirely new meal.
I am already starting to plan out some recipes that are easy for back to school season. This year on top of going back to school and extra activities, my son is adding in football to our week too. I have no doubt we will enjoy it, but we will also be busy. This entire meal from start to finish takes only 15 minutes!
That’s right, dinner in 15 minutes. I’m on it!

Chili Dog Casserole
Get ready to make a delicious quick meal with this Chili Dog Casserole!
Ingredients
- 1 46 Count Package State Fair Classic Minis Corn Dogs
- 4 16oz Cans of Chili Beans, Mixed Varities
- Shredded Mexican Style Cheese
- Green Onions to Garnish
Instructions
- Preheat the oven to 375*.
- Using a 9x13 baking dish, spray it with non-stick cooking spray.
- Add the beans to the bottom of the dish, spreading them evenly and mixing them up if needed.
- Top evenly with corn dogs, to your preference. This took about 27 for a 9x13 baking dish.
- Bake for 12 minutes at 375*.
- Carefully remove, add cheese evenly on top.
- Bake for an additional 3 minutes or until cheese melts.
- Garnish with green onions.
- Serve.
