As a kid, I remember morning breakfast almost always included cereal or toast, what did yours include? I remember down the street from us another friend, her family always sat down at the table in the morning and had a very balanced breakfast with lots of variety. I’ll admit I was a little jealous, but our family was different as are just about all of us. We all have different routines. My mom left before I even went to school to head off to work and my dad was typically just getting off an overnight shift and trying to get us out the door so he could get to sleep. Now that I have a family of my own, we tend to take our mornings a bit more slow and with a more of a sit down breakfast.
My husband loves to make a big breakfast, so a few day a week he cooks the works for breakfast including eggs; however, I like to have some Cheesy Baked Eggs on hand too for the days when we are busy and just trying to get out the door. That’s one of the perks of raising your own chickens, we always have lots of eggs to use up during the week so baking them earlier in the week and being able to reheat them on busy mornings is a great option for us. Along with baked eggs, I always have a package of Sandwich Bros. of Wisconsin® Chicken Melts in the freezer to prepare too. I find it gives my family a boost of protein, which is necessary to make it through the mornings hours and really the entire day.
Now, to bake these eggs, all you need to do is use a muffin tin, then crack an egg in each one, top it with cheese, and bake. I even like to sneak some spinach in these too just too. The kids rarely notice, so that makes a great way to get a green veggie in as well. Once they are in the oven, they only take about 10 minutes to bake. A great option with these eggs is to put them in right when you get up and then get ready or do other chores while they bake. Once our eggs are done, they pair beautifully with a Chicken Melt, plus a few strawberries too.
The Chicken Melts use premium ingredients and are packed with protein, which when paired with the baked eggs makes for a protein packed breakfast. Of course, I also can’t forget the coffee. That may be the most important part of my morning!

Cheesy Baked Eggs
Ingredients
- 12 Eggs
- Shredded Colby Jack Cheese
- Optional - Spinach Tomatoes, Peppers
Instructions
- Preheat the oven to 350*.
- Spray a muffin tin with non-stick cooking spray.
- Crack an egg into each muffin tin.
- Top with any optional toppings and finish it off with a sprinkle of cheese.
- Bake for 10-15 minutes or until fully cooked.
- Remove and cool for 2-3 minutes, then carefully remove from the muffin tin.

I don’t eat eggs, but my husband and stepdaughter love them! Thanks for this – I have made them in muffin pans before, but not with cheese or other ingredients. What a fun way to change it up!

Those look like a way better breakfast than I usually make, haha. Growing up, we didn’t eat breakfast a lot. If we did, we were like you, it was toast or cereal. Some mornings my mom would have fresh fruit or pancakes and that was a highlight. We all got up at various times and lived on a farm so it was a fend for yourself thing.
Those chicken melts look delicious! I love the little cheesy egg you paired with them too! It reminds me of chick-fil-a. I think chicken is awesome for breakfast or brunch!
