I recently mentioned that I was chosen as one of 20 bloggers to post recipes as part of Emeril’s One Pot Cooking Party. As part of participating, we were given 3 recipes to share with our reader’s Duck Salad, Shrimp Stew, and Tuscan Soup. I posted each of these recipes last week. This week and next we are to cook 3 recipes out of the book and review the recipes; however, we are unable to share the full recipes. Not to worry, because at the end of the campaign I will be doing a giveaway for the Zak Bowls and Emeril’s Sizzling Skillets cookbook.
The recipe I tried this weekend was Butternut Squash Lasagna with Italian Sausage and Sage. To be honest, this recipe nearly did me in! I was not prepared like I should have been for some reason I thought that I had purchased all the ingredients that I needed; however, when I went to make it many of the ingredients I thought I had, I didn’t. What did I do? I improvised several of the spices for ones that I had on hand. The result? It was delicious!
It was definitely a different taste than what I am used to as far as lasagna goes and it had a large amount of cheese, but it was something out of our normal which was nice. I like to fix quick meals and this one was not quick at all for me. If I had been a bit more prepared it may have been; however, there were several different steps to get to the final result of this dish.
One aspect that I truly loved about this dish was that it made a lot. My husband and I had dinner, leftovers and then put 1/2 in the freezer to save for later. It’s the perfect dish to use for freezer cooking.

This looks like it turned out great! I wanted to make this one but don’t know if I’ll get around to it. They recipes are certainly not all easy, are they? It’s stretching my culinary skills, which I love….but it is making it tough to do three posts a week!
Yes, way tougher than I thought it was going to be!! I did a crock pot recipe last night, that was much better!!
This looks SO good, but I fear it would be too many carbs for me. Living vicariously through you!
This recipe looks so pretty! I would love to try it if I win the book. This would be great, and probably go great with Italian creme soda for dessert. 🙂
