Lately, I have been really getting into the recipes in the magazine, Cooking Light. I have mentioned before that I am on a diet! After having some blood sugar issues earlier in the year, I realized that I was feeding my blood sugar when it dropped which was essentially adding an extra meal into my normal eating routine.
As you can imagine, that extra meal for those several months started showing up in various places around my body. Then, I realized a few things about my blood sugar and that I needed a snack before it went down to keep it regulated. Now, I have the eating under control and it’s time to loose those extra pounds!
I found that the Cooking Light magazine is a great resource for delicious recipes. Recently, I tried their Blackened Chicken with Dirty Rice. I just made the Blackened Chicken and for the rice I made that fairly simple just adding some butter and chicken broth plus a few veggies.
This chicken was so incredibly tender and juicy! It was delicious and served over a bed of rice, simply perfect. I also made some Rosemary Roasted Potatoes to go with it, but I think next time I am going to make Garlic Seared Brussels Sprouts.
